a green lunch is a good lunch!🌿🌱 I meal prepped this on Sunday for lunches this week and it’s been sooo nice to have easy meals to grab so I’m not starving by the end of my shift at work😋 it is super hot outside today so I’m going to be getting some stuff done for college online and hopefully keeping cool inside☀️ I would go to the pool but when you work at a pool it’s easy to get turned off by that idea😂 hope everyone has a great rest of their day! -

Love breaking my fast on Low Carb Day after a great Tabata Workout! Today, I ate some Pulled Pork, had two soft boiled Eggs (sprinkled with EBTB), mashed 3/4 of an Avocado (more EBTB) and added some Organic Raspberries. So delicious and filling and letting me stay Low Carb!

I roasted an assortment of veggies last night that I could use for my lunches and dinner this week. I’m always happy that I do this because then prepping lunch and dinner during the week is easy peasy! We’ve got sweet potatoes, broccoli, shrooms, and peppers.
Bowl dEATs: handful of cruciferous crunch mixture + roasted veggies + purple kraut + roasted tempeh + jicama + EBTB seasoning 😍.
All coated with a tahini cheezy sauce: [1/4 c tahini + 2 Tbsp apple cider vinegar + 1 tbsp soy sauce + 1 tbsp maple syrup + 2 tbsp nutritional yeast + water to thin]

Rainy brunchy Saturday’s at home. 🤗 I’m not always a breakfast person, but when I am - I’m all in. Hubby said we can’t go out to brunch anymore because this was so perfect. & Yeah.. I definitely won’t be eating lunch today. 🍳🍠 🥑 🥓 🐷
Pan fried sweet potatoes w/ avo oil, pink salt, rainbow peppercorns, rosemary, garlic powder & cayenne pepper (toss all in a bowl, cover and cook over medium heat, tossing occasionally). Avo w/ ebtb seasonsing, over medium egg w/ TJ’s everyday seasoning (coconut oil nonstick spray, don’t season until after they’re cooked to desired temp) & cholula (duh), turkey sausage & bacon, the real stuff. + french press. It’s grad party season, so my mom put me in charge of making the “healthy food”, as she likes to say😂 So I decided to whip up some yummy fruit salad, consisting of strawberries + blueberries + mango + kiwi + pineapple + watermelon with a honey cinnamon glaze drizzled over top 🍓🥝🍍next was homemade roasted garlic hummus! I simply roasted 1/2 a head of garlic in the oven at 400 degrees for about 45 minutes, threw it into the food processor with a can of chickpeas + 2 tbsp @traderjoes tahini + 1/4C water + S&P + paprika! Once plated I top it with a dollop of minced garlic & a sprinkle of EBTB seasoning, and put a colorful array of veggies alongside 🥕🥒🌶👏🏻😋

i just started binge watching keeping up with the kardashians on hulu, and i’m already on season 4 after a week and a half😩 not sure whether to be proud or ashamed!!!! either way, it’s such a good show and you guys should all watch it if you haven’t before!!
Happy Friday!! Couldn’t decide on breakfast this morning so I had both an egg with EBTB and a piece of Ezekiel with Almond Butter, Banana, chia seeds, and cinnamon 🍳🍌 so yummy and satisfying! I only have 3 more weekends in DC 😰 so I’ll be spending time outside, going to OrangeTheory, studying, and hitting the farmers market. Very lowkey but hopefully productive! Who has fun plans this weekend?? I’m headed to Georgia in 3 days and I CANT wait!!! 🍑🍑
