✨CHICKPEA// CHICKEN PASTA✨
So yesterday my lil veggie @stephaniesmeriglio came over because we are planning a little road trip! Of course neither of us had dinner and it was 7pm, AND @mommarods took all the food to the cottage, so I was trying to get creative at this point. I love that steph is a vegetarian because it challenges me to think of other ways to get in proper nutrition without meat! Inspired by the fact that she’s A WHOLE QUARTER Italian, I whipped up a lil pasta dish that I added chicken to for myself, and left as is for Steph. Hope you guys enjoy this when your mom and dad leave you with an empty fridge!! 😂
2 cups of dried rotini pasta (I prefer whole wheat)
1 zucchini diced
1 package of spinach (yes mom I used all of it you’re welcome for clearing out the fridge even more)
1 onion diced
2 cloves of garlic
Dash of dried parsley and dried basil
1 can of chickpeas drained
1 cup of your favourite marinara/ pasta sauce (I use Louise’s in a jar from Longos)
2 chicken breasts diced and cooked (for non veggies like myself)
Cook pasta as instructed on package.
While the pasta is cooking, fry onion, zucchini, and garlic in about 3 tbsp of olive oil on medium high in a fry pan until onions are soft and zucchini is slightly brown. Add chickpeas in and stir constantly for 3- 5 min. Season with parsley and basil.
Pour in marinara/ pasta sauce and simmer on low for 5-10 min.
When pasta is done cooking, drain and add olive oil to prevent from sticking.
Serve pasta with a heaping scoop of the chickpea mix, and top with Parmesan and diced chicken (for the non veggies). Enjoy when you’re clearing out the fridge and feel free to add more veggies! ✨

Well, except my dad. He was standing on the deck waiting for me when I got home at work this afternoon! It wasn’t but ten minutes later that we + my sweet pup Lucy were on our way to the trailhead for a quick afternoon jog. 😊

I only ever go running once in a blue moon. I like running, but it’s not my favorite, I get bored doing it daily & it’s pretty hard on my hips and knees! So a good jog here and there is all I need to keep me happy. 😊 I have no idea how far we went or how long of a run it was, I’m just happy to get out and get active. Especially with the ones I love. ❤️
FOOT-BOULE | Baked a midnight loaf while most people were probably watching the Japan-Senegal match 😅 While I got a much better rise out of this loaf (which might mean my shaping and surface tension is improving) I think I still need to push the fermentation of the dough even further to better the crumb...
