Pesto is one of those yummy foods that can be used on or with so many other foods. On toast, pasta, salad, in salad dressings, veggie stack, roast veggies, halloumi cheese, the list goes on! 🌿
For this week's Sunday recipe we thought we’d share our favourite version of the green goodness. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Raw Cashew Pesto.
Ingredients: - 3 x cups of fresh basil
- 1 x cup of raw cashews
- 1 x small clove of garlic
- 1/2 x cup of parmesan cheese
- 1/4 x cup cold pressed olive oil
- Squeeze of lemon
- Salt and pepper to taste
1. Place all ingredients in your Omniblend
2. Blend on medium and use your tamper to move the ingredients around
3. Taste test and add a little more of the ingredients you desire ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Hot tip: - Blend for longer if you like a smoother pesto and shorter if you like a chunkier pesto 👌

I loved recreating one of my favorite salads from @lepainquotidienusa at home. Spicy arugula, warm nutty quinoa, fresh basil, perfectly ripe avocado, crisp tomato and the juice of one bright lemon (plus olive oil, nutritional yeast, hemp hearts and Himalayan salt - “the DLE fix-ins”😉). So so good, fresh and filling! #yum What’s on your weekend plate?!

A bit different today because everyone usually fends for themselves when it comes to our Saturday lunches but the weather isn’t the greatest so this happened. Things I had on hand became a pasta dish I’ll be repeating quite a bit! Zucchini, onions, anchovies, a hint of garlic, roasted tomatoes, herbs from my herb garden and a generous amount of parmiggiano reggiano. Should I ever start a blog 🙄 this will definitely be on there.
