Bolognese ragù is one of the most known and imitated preparations in the world. The term ragoût, of French origin, indicates a sauce based on vegetables, herbs, meat and tomato, commonly used as a pasta sauce.
To make a ragù, a good tomato and minced meat is not enough ... so to defend the originality of Bolognese meat sauce, in 1982 the Italian Academy of Cuisine filed the official recipe at the Chamber of Commerce of Bologna.
