❤ ROAST HEIRLOOM CARROTS ❤
I just love baby heirloom carrots.
They are so colourful and super sweet. I love to roast them to bring out a caramelised flavor with a bit of char for good measure. #yummo
1 kg heirloom carrot mix
1 splash olive oil
Salt and pepper
½ tsp fresh thyme
Pre-heat the oven 180 C / 350 F.
Cut the carrots in half (lengthwise) then place them in a large bowl.
Add the olive oil, salt, pepper and thyme.
Mix well together then transfer to a baking tray.
Bake for 45-50 minutes - turning halfway.
Remove from the oven and serve as a side dish or in a salad.
