Last Call Asparagus!! As a gal who cooks seasonally, I’m sad to say, asparagus season is coming to a close. However, many people are vacuum sealing their asparagus, which they first blanch, then freeze to enjoy all through the winter.
Here are three ways to prepare asparagus tonight:
Way 1 - Foam butter in a skillet, add asparagus shake and coat evenly with foam. Cover pan tightly. Then continue cooking for 5 minutes until asparagus is tender crisp and green
Way 2 - Roast asparagus in the oven until it gets golden and crispy. Sprinkle with kosher salt. It’s as delicious as a french fry.
Way 3 - Blanch or boil asparagus, then finish with a Meyer lemon mayo.
Way 4 – When I’m cooking or @nocrumbslefts_otherkid who is eating a vegan raw diet, is cooking, I shave the asparagus and serve it with a bit of olive oil, lemon and garlic.
Here’s a Teri Tip: When buying asparagus, look for stalks that are firm. With your fingers, take each end of the asparagus and gently bend the stalk into an arc, it should be a bit resistant, but snap naturally.
